Thank you so much for the fun comments about my first real post about reading nutrition labels! I really enjoyed writing it and I’m looking forward to doing more posts like that in the future.
Today has definitely been a TGIF kind of day. I woke up late, got stuck behind an accident on my commute to work, got stuck behind *another* accident on my way home from work, and decided to forgo a much-needed trip to the grocery store. Now I’m just relaxing at home, watching the opening ceremonies with Kyle.
If you have a nutrition or foodie friend then you may notice that we have a small obsession of taking pictures of our food. I’m pretty sure every meal I’ve eaten in the past few months is documented in my phone. So in honor of that, here’s what I ate today:
I had a small breakfast this morning due to an empty fridge.
Lunch was from the school cafeteria… broccoli & cheese soup, crackers and a garden salad w/ Italian dressing. My salad is kind of sad looking because it sat in my hot car for a while.
Afternoon snack = corn chips & salsa
Dinner was oven roasted chicken, quinoa and steamed veggies.
And now K and I are enjoying a post-dinner snack of strawberry banana smoothies while watching the opening ceremonies.

P.S. The highlight of my evening thus far has been seeing the Olympic flag-bearer from Venezuela in the opening ceremonies. That guy was awesome!!
