Hey there. Hope you’re having a great start to this week. I’m hanging around waiting for the basketball game to come on. Several of my friends went to UK so I will be cheering for the Wildcats tonight
On to Monday Eats….
I’m still chipping away at my freezer stash of pureed foods, so I had the usual: oatmeal mixed with baked apples for breakfast. I have been drinking less coffee lately, so I opted for tea this morning.
I packed a peanut butter sandwich for lunch. My husband was eating one yesterday and it made me crave one!
I had a popsicle for an early afternoon snack
and some yogurt for a late afternoon snack
Dinner was interesting tonight. I wanted to use up some pureed chicken I had in the freezer, but I am sick of soup. I ended up making a ‘dip’ with the following layers:
Bottom = pureed chicken with italian seasoning
Middle = pureed tomatoes with olive oil, garlic, oregano, salt & pepper (blended in the mixer)
Top = freshly grated parmesan cheese
I randomly made the dip combo up and it was pretty good. It got the husband stamp of approval. I will probably make it again with shredded chicken instead of pureed to add some texture.
By the way, I’m kind of obsessed with this new serving dish:
I purchased it yesterday at Sur La Table on clearance for $13. I liked using it but realized the serving compartments were kind of shallow for a layered dip. But it’s different from my other serving dishes and it’s dishwasher safe, so you can’t beat that!
