K and I have enjoyed having a 3-day weekend together, and it was an added luxury that it fell right after our vacation.
There were a lot of things going on in town on Friday, but we have stayed home on July 4th for the past few years because Beamer has been pretty bothered by fireworks in the past. When we lived in our house in VA, this didn’t seem to be much of a problem as long as the TV was on drowning out the sound. In our apartment here, people always light off a lot of fireworks in the parking lot and there’s no masking that sound. We ended up grilling out and (thankfully)there weren’t too many issues that night!
One of my coworkers gave me a huge bag of her garden vegetables to take home this weekend, and I have been incorporating them into a lot of meals! Tomatoes fresh out of the garden are amazing… I start slicing one to put on a sandwich and end up eating the whole thing
I was also playing around with a new smoothie recipe because I was trying to use up some baked apples. It was pretty good except that I threw in 1 Tbsp of chia seeds. They have more of a nutty flavor, and I think the smoothie would have tasted more like apple pie had I left them out. I am planning on doing a post about smoothies in the near future and will be sure to share the finalized recipe
Last night, we went on a dinner date to Vivace. It’s our favorite restaurant and it was delicious, as always.
I usually get whatever salmon dish they have on the menu, but last night I decided to change it up and try out their special of the night: NC bass over cauliflower.
K got a the pork chop milanese with grilled peaches. It was SO good! I wanted to steal all of his food
We ended up getting 2 desserts and splitting them.
I don’t think I’ve ever had a dish there that I didn’t love… highly recommend it if you’re in the midtown area of Charlotte.
