So yesterday was a good day because it included 2 of my favorite foods/meals.
For lunch, I had a perfectly ripe avocado. I don’t know about you, but cutting an avocado when it’s not too hard or soft is an art to me. First it’s not ripe, and it sits on the counter for what seems like forever. Then, all of the sudden…. bam. It’s too ripe and brown. It’s like the avocado is messing with me.
I could tell yesterday when I put it in my lunch bag that it was going to be good, and I thought about it all morning! I ended up putting it on my sandwich at lunch and it lived up to my expectations.
Dinner was a special treat because K got off of work at a decent time and we were able to eat before it was dark outside. That is a win in my book. The only problem was that I had planned to make a Mexican dish but the rice was going to take around an hour to cook. We decided not to wait so we ended up meeting at Panera for a quick dinner instead.
I am kind of obsessed with Panera’s greek salad with chicken. Olives. FETA CHEESE. So good.
After dinner, I rode my bike for an hour, took a quick shower and got to bed early. Waking up at 5am is kicking my butt
