Hey there! Hope your week is getting off to a great start. I am just hanging out with my 2 favorite furry friends and drinking a cup of coffee.
I’m beginning a Tues-Fri schedule at work so I have today off. I’m planning on a run (maybe- see below) and then trying to get some things done around here- picking up, changing the sheets and doing my least favorite chore ever: cleaning the bath tub.
I’m kind of scared about going back to work tomorrow because I have been staying up way too late these past few days… there’s no telling what will happen when the alarm goes off at 5am
So yesterday, I spent A LOT of time in the kitchen doing some meal prep to get us through this week. I have really fallen behind with meal planning lately and we have been eating out wayyyyyy too much.
Time to scale it back!
I went to Aldi on Friday to pick up our usual staples (fruits and vegetables, mainly), but I decided not to go on a big shopping trip this week. We have so much meat and food in our freezer/pantry that I thought we could get by with what we’ve got.
Here’s what I ended up making for the week:
Stuffed Mushrooms (using some slow cooker marinara that I pulled out of the freezer)
Turkey Roast (in the slow cooker)
Baked Apples (in the slow cooker)
Squash Casserole
Roasted Asparagus
Steamed Broccoli
And I went ahead and chopped up a cucumber from the fridge since I was already cutting vegetables.
I also stuck 2lb of raw ground beef in the fridge to thaw out. I thought about making a double batch of meatloaf today since I have some free time, but I will probably end up just browning it to use for tacos or spaghetti.
And then there’s this:
Sometimes I like to get creative in the kitchen. There are times when this ends well and times when it doesn’t. I’m not quite sure what to say about this recipe, yet. It’s kind of like rice pudding but with quinoa. The verdict is still out
We also have leftovers from yesterday’s Caribbean meal.
It really only took me an hour to prep all of this stuff, and now we have enough things for meals and leftovers for several nights. I joked with Kyle that I thought we needed another Crock Pot. Well, I was only partly joking
Let’s change gears… time for a Monday Mileage Report
It’s hard to believe that my 325 miles challenge is coming to an end! This week is my last week and I am very close to 325 miles… only 15.41 miles to go! Here’s what I did this week.
- Thursday- Walk, 1.66 miles
- Friday- Bike, 13.03 miles
- Saturday- Walk, 3.12 miles
- Sunday- Bike, 11.22 miles
Miles this week = 29.03
Total miles = 309.59
I started the week off kind of slow because I just needed a break after getting my road bike. I had gone on several long test rides that weekend and it was also hot outside.
I got back into things on Thursday, but I started feeling a sharp pain in my left knee almost immediately after I tried to go on a run. I wasn’t quite sure what was going on, but I ended up only walking 1.66 miles and calling it quits. Sometimes I get funny pains and they are gone the next day, but this was just as bad on Thursday on my ride.
I decided to start icing it and taking advil after that. I went on a walk on Saturday and it seemed a lot better, and it didn’t bother me after my ride yesterday either. So maybe it was just nothing. I have been icing and taking Advil religiously for the past few days…. I am going to try to run today and if it still hurts then I will completely stop exercising for this week and see how it does.
