Hey there! Hope you are having a great day. I’m getting back into the grind of this work week after having a lovely day off yesterday.
My Monday started with a pre-run banana and cup of coffee.
After my mini-breakfast, I stretched and headed down to the greenway. Lily confuses stretching time with belly rubbing time.
The weather yesterday was pretty much perfect. I was interested to see how my knee would hold up since I’ve been having some pain recently, and I was able to run for 1 mile before it started to feel sore. I didn’t feel any sharp pain or anything, so I think I may have just overdone it recently. I walked for 3 more miles before calling it a day and decided to hold off on walking/running for a little while to give it some rest.
After I got back home and showered, I heated up my leftover stew chicken, dahl and vegetables from our Caribbean dinner the other night. Leftovers = the best.
For the rest of the afternoon I just worked on some more blog stuff, took care of some things around the apartment and did laundry. I lead a crazy life
For dinner, I made this sausage dish and it was really good! I usually don’t cook with sausage so it was nice to try something different. I packed up the leftovers and put them with the rest of our pre-prepared food from this weekend. Now we have enough meals to get us through until the end of the week. Score.
Another thing I ate yesterday was one of my favorite snack combos: baked apples with cottage cheese. It doesn’t sound that great at first but if you like peaches and cottage cheese then you will probably love this.
I top 1/2 C cottage cheese with 1 apple (8 slices baked apples). I used my slow cooker baked apples recipe, which doesn’t have any butter or added sugar, and I saved all of the juice after they are cooked. The apples + juice are pretty tasty mixed in with the cottage cheese. Anytime I eat baked apples, I kind of feel like I’m eating dessert
I love this snack combo because I get in some fruit, dairy, protein and a little bit of fiber. It’s a no-fuss snack that packs easily to take to work. The biggest win is that keeps me full until the next meal!
