Today, I’m linking up with Peas and Crayons for a What I Ate Wednesday post. I wanted to share my most recent breakfast obsession: omelets.
I attribute this to a recent 4-day weekend when I had plenty of time to make breakfast in the morning.
I use the same base recipe to make all of my omelets: 1 whole egg, 3 egg whites, 1/8 C milk, salt and pepper to taste. Beat all ingredients together. You’ll see here that I use 1 whole egg. I usually use 1-2 whole eggs in all of my egg breakfasts because I like the added nutrients. Then I will use egg whites for the rest- more protein but keeps the calories in check.
From there, the omelet world is my oyster! These guys are a great way to sneak in some veggies (I usually use 1 to 1.5 C) and cheese.
Let’s break down why I think omelets are awesome…
Eggs = cheap
Lean breakfast (high protein without being loaded with fat and calories)
Easy and quick to make
You don’t have to dirty a ton of dishes <—the most important thing, right?
Lots of room for customization
The other day I stuffed my omelet (ha, that kind of sounds dirty) with 1 cup of spinach and 1/4 c shredded cheese. Cheese is awesome, yo.

Big fan of omelets. I enjoy adding a 2 tsp. of ground flaxseed to my mixture. Bulks it up a bit.
Great idea. I have a big bag of ground flaxseed in my cabinet actually that I really need to use up!
I LOVE omelets!! My fav is when I add shrimp, avocado and salsa! The Best :)
I have never thought to add shrimp but this combo sounds amazing!

Hey lady it’s my first time stopping by your blog but I just want to say congrats on the omelette making and perfecting, I definitely think there is a trick to really great omelets, but yours looks fantastic! I have been on a kick of making them for my lunches it’s easy it’s quick and you get a lot of nutrients in!
