I’m actually headed out of town today to be with my mom. She’s having surgery this morning and I’m going to hang out with her for the next few days. Please say a special prayer that everything goes okay today!
And thank you for the kind thoughts from yesterday’s post about my knee. Dealing with an injury is no fun and sometimes it just feels good to whine. I’m got my follow-up bumped up a few weeks, so that’s good.
And now, for a What I Ate Wednesday post (linking up with Peas Crayons), here is a hodgepodge of things I have recently become obsessed with:
I really love citrus when the weather gets cold. Ironically, I don’t like cold citrus. So I always pull out a piece of fruit from the fridge early in the day and let it sit on the counter so that I can eat it at room temp. Is this weird?
The Damn Fiber Bars
I know this is going to make me seem like a failure of a dietitian because I’m supposed to make everything from scratchhhhhh, but I love these. I got 1 box from Marshall’s and it all went downhill from there (or uphill, depending on which way you look at it!). The ingredient list is decent, they are packed with fiber and they are super convenient to grab in the morning and eat in the car. I can’t get enough of them.
A Light Lunch Trio
Hummus, thin pretzels and a fruit bowl.
Sometimes I really am not in the mood for a heavy lunch and prefer to snack all day instead. Is anyone else like this? This is my most recent lunchysnack combo… then I will follow it up with more food. All afternoon.
So I’ve never actually followed a recipe for stuffed peppers. I kind of just make some sort of filling that I think will taste good, dump it in the peppers and hope for the best. Sometimes the results are good and sometimes they are… interesting. Thankfully, these were pretty good! I used: 1/2 lb lean ground beef, 1 can black beans, 1 diced onion, 1 diced squash and 1 Tbsp of Mrs. DASH fiesta seasoning. I topped them with cheese, salsa and plain greek yogurt.
P.S. I feel like getting all of the peppers to stand upright in the dish to bake is an artform. There are always a few casualties during the process.

In case you missed it, she threw a glass of wine in Eileen Davidson’s face for no reason and told Babyface that he should have purchased his wife a bigger engagement ring. Homegirl needs to stop talking and lay off of the booze.
