Hey friends. Hope you had a nice weekend and that your week is off to a great start.
My weekend didn’t quite go as planned because my trip to Virginia got cancelled due to an impending snow storm. They were calling for 3-5” on Saturday and my grandmother and I decided it would be best if I visited a different weekend. I was disappointed that I didn’t get to see her but as I established in Friday’s post, I don’t drive in bad weather.
I wasn’t planning on being home for dinner on Friday night, we were running low on groceries and I had a rather large lunch (Pad Thai from my favorite Thai place by my work), so I ended up making a simple egg sandwich for dinner:
Whole wheat bread, 1 fried egg, cheese and spicy mustard. Glass of milk on the side. Eggs are basically my default when I don’t feel like trying to think of something better to make.
We also spent a lot of time lounging around on this weekend. In our snuggies.
I decided to jump on top of my food planning game this weekend so I made a big grocery trip on Saturday to Aldi, Trader Joe’s and the local butcher. Meat is so much cheaper there so I really stocked up.
My purchase included:
- 2.5# ground beef
- london broil
- beef strips
- beef stew meet
- pork loin
- pork chops
- chicken breasts
- chicken strips
- chicken sausage
- crab cakes
I got all of that meat for $50… and got to chat with the butcher while I was there
On the menu this week:
Monday: crab cakes with sweet potatoes
Tuesday: spaghetti with meat sauce
Wednesday: Out to eat
Thursday: Pork loin with roasted asparagus
Friday: London broil with baked potatoes

I hit up the mall on Sunday because I needed to stop by Sephora to pick up some new foundation. My current one is from warmer weather and now it’s a little too dark for my skin. My complexion has lightened up so much that I wasn’t sure if I should bump up 1 or 2 shades lighter. So naturally, I took the next 2 lighter shades and put each one on each half of my face. Then I walked around the mall and tried to decide which side I liked better. Perfectly normal, right?
Last week, I made it a goal to incorporate a new recipe into my meal rotation. I was getting tired of the same old, same old. Thanks to those of you who sent me your recipes! I’m looking forward to trying them
I ended up cooking 2 new recipes this past week. I shared the first one, stewed beef, in my What I Ate Wednesday post.
Last night, I decided to make Barefoot Contessa’s Lemon Chicken. I have never made one of her recipes before but someone shared the link on Facebook and the dish looked realllly good.
I think it turned out well! Check back on Wednesday for more details about the dish. I kept track of all of my eats from yesterday for my WIAW post on Wednesday, so I will include everything about the Lemon Chicken there.
My goal this week is to file my taxes. Please pray for me <3
