Hey guys! Happy Wednesday… and April! We’re on our way to summerrrrrr. Before I get this post going, I have to ask if anyone else watched the Justin Bieber roast. My favorite parts were Kevin Hart running around Shaq, Martha Stewart and Snoop. So funny! I own Justin’s first album and I decided I’m not embarrassed about it. So yeah, now you know me on a whole new level.
But anyway, let’s get down to business. What I Ate Wednesday:
I decided to get a little fancy for breakfast. Or my version of fancy. Let’s take that for what it’s worth.
On Shahs of Sunset last week, MJ stated that it was a proven fact that french toast is better if you cut the bread into quarters. We should all obviously live our lives according to the Shahs so I decided to try it.
The verdict? More labor intensive. Appears to be a giant mound on your plate. Tasty. Added crisp around the edges. Two thumbs up.
Plus 1/2 grapefruit, lots of bacon and coffee on the side.
Nutrition note: center cut bacon can actually have less saturated fat and sodium than turkey bacon (depending on the brand). This is good news for me because I don’t like turkey bacon. Always read the nutrition label!
I realized I have about 20 photos of coffee on my computer so I’m just going to recycle them from now on.
Instead of beating the french toast ingredients, I dumped everything into the blender. Part of this is because I constantly feel the need to justify purchasing a Vitamix. The other part is that I’m really that lazy.
I went for a smoothie for lunch for some added calcium and to fit in some fruit/vegetable servings (and again, justifying the Vitamix). I like smoothies because you can kind of make them whatever you want to be… light for a snack or bulk them up for a meal.
This smoothie has milk, spinach, frozen strawberries, part of a banana and some peanut butter.
Sea salt dark chocolate covered almonds. And after some thought, I decided to count this as a snack because, um, there’s some protein in there.
Taco soup! Made from a recipe given to me by a good child nutrition friend that I then turned into a school recipe. So I think about my old job as a school dietitian every time I make it!
Ice cream. An activity that I take seriously. You know what else I take seriously? Wearing jorts when the weather gets warm.
