Happy What I Ate Wednesday! Today’s post is kind of short and sweet, so here’s a full day of recent eats:
2 eggs with 2 kiwis.
I’ve noticed my fruit intake has been super low recently so I’ve tried to add in some variety this week.
Banana oatmeal: 1/3 C oats, 2/3 C milk, 1 large diced banana, cinnamon and vanilla extract. Plop of peanut butter in the middle. Love.
Okay, so this was a really heavy “snack”. The truth is I just wanted some oatmeal. Definitely didn’t eat it enough this winter!
Leftover grilled chicken and a bunch of random vegetables from different meals. Half of the vegetables were roasted and half of them were grilled, but it worked!
Tip: Do your vegetable prep/chopping and once and cook a huge batch. It will last you throughout the week and save you time on busy days.
Spaghettiiiiiii. I like to toss some vegetables into my pasta dishes, so this time I added some roasted tomatoes. Can’t wait for summer and garden tomatoes!!
