Hey guys- I’m excited to be jumping back onto the What I Ate Wednesday bandwagon this week!
As I mentioned in yesterday’s post, I keep coming across more info about protein intake and almost every source has stressed how important it is to get even amounts throughout the day. Not that I hadn’t heard this before, but it was eye-opening to read some statistics about how much lean muscle mass can be affected if you eat the majority of your protein at dinner rather than evenly distribute it at all three meals.
So I’ve been cognizant lately to get at least 20g of protein at breakfast. This is usually achieved by mixing and matching several items.
Monday’s breakfast consisted of an omelet made with 1 whole egg / 2 egg whites with 1/2 C spinach and 1/3 C shredded cheese in the middle.
Can we please stop for a minute to admire this? I’ve been working on perfecting my omelet game these days. Not too shabby. I used a 12” pan, though, and I realize that a 10” is much more appropriate for omelet perfection.
I also had a glass of milk on the side.
I added up the amount of protein at this meal and it was 28g. A little more than the estimated 23g that I need but go me.
Monday was fun because I had the day off of work, so I went for a swim at the Y in the morning and stopped by the farmer’s market on the way home. We have a local farmer’s market that sets up every Monday right down the street from me, and then a lot of those farmers set up stands in my hospital’s parking lot throughout the week. It’s actually more of an inconvenience to go to the grocery store for produce since the farmer’s are closer, and that’s pretty awesome.
I picked up some cucumbers, squash, zucchini, tomatoes and a head of cabbage for $6.
So when I got home from my swim, I made my standard lunch of tuna salad. I was bummed because I was planning on adding 1/2 of an avocado to the mix but my avocado had gone bad already. I believe cutting an avocado while it is perfectly ripe is a form of art… one that I’ve yet to perfect.
Anyway, I had my tuna salad with some crackers and chopped vegetables topped with a vinaigrette dressing.
Forgot to snap a picture but I had a banana with peanut butter. Or really peanut butter with a banana, but who’s keeping track?
So even though I moved to a tiny town, there is this really awesome Thai place and I love eating there. Their pad thai is the best I’ve ever had, and I ordered take-out for dinner. It was a special night because Shahs of Sunset AND the Real Housewives of OC came on, and I just felt like Thai was in order for the occasion.
Change is hard. By the way, I thought I would be all healthy once and look up how to make pad thai. I saw the recipe called for something like 20 ingredients and decided that I’m perfectly content with takeout.
And lastly, on a different note, remember when these guys made a weekly appearance in my WIAW posts?
Turns out that moving AWAY from Fresh Market was good for me. I think I eat about 100x less candy each week. So if you’re looking to decrease your candy intake then don’t shop at grocery stores with bulk bin candy. I’m glad I could give you some dietitian wisdom for today.
