Hey guys! Happy Monday! Hope you had a fantastic weekend. I worked on Saturday and was on call on Sunday, so mine was fairly uneventful. Here are some randoms from the past few days:
I stopped by the farmer’s market on Saturday and picked up a bunch of produce. I’m trying to purchase a majority of my vegetables there this summer instead of getting them at the grocery store. So far, so good.
I ate some fresh rolls. They were good but the peanut sauce was lacking. And we all know the peanut sauce is the best part of that dish. (Charlotte peeps: Pho Real has the best fresh rolls and peanut sauce ever)
Lily got a bath. Not what she had in mind for a relaxing weekend.
I found my favorite coffee mug. I love owls. And coffee. So this is perfect.
I pulled weeds in my bathing suit. Sorry, no photo of that.
First Day of Summer
We are officially into summer now! Woo hoo I think the change in seasons is the perfect time to think about your health and any improvements you can make in the exercise or nutrition department. Here are a few of my own challenges…
Fitness: I’m still pretty limited with what I can do because of my ongoing knee issue *but* I’ve really spent the last month trying to incorporate exercises I can tolerate into my daily routine… swimming, elliptical, PT exercises, etc. I would really like to keep up the momentum and continue to find activities that will not exacerbate my knee problem. I have also noticed that I sleep so much better when I exercise 4-5x per week.
Nutrition: I need to focus on more efficient meal planning this summer to keep me on track with making healthy food choices. Having no plan almost always leads to me eating junk. The key to meal planning for me is to do everything on Sunday: plan out meals, get groceries and meal prep. So I’m trying to get back to that.
I dropped by the Concord Mills outlets on Saturday evening and picked up a set of Pyrex dishes from the Corelle store. I needed new tupperware and decided that something more dishwasher-friendly was the way to go. I made a big pasta & veggie dish (recipe coming soon) and divided it up into my new dishes to take to lunch this week. Side note: the 2-cup dishes are the perfect size for a meal portion.

I’m trying to get better at meal prep too. I’ve been very lazy lately and that definitely leads to convenience eating. For me that means a lot of toast & eggs for supper. Not ideal.
I can relate to that… God bless the PB&J. That sandwich has seen me through many lazy nights.
Aww, wet dogs are just the cutest. And I’m with you on the meal prep. If I don’t do it all on Sunday I’m bound to eat junk later in the week. My boyfriend and I actually experimented this week with making ALL of our meals (lunch and dinner) ahead of time. We’ll see how that goes!
That sounds like an awesome plan. I’ve been thinking about doing something similar this sunday… we shall see how that goes :)
Weekend BBQ with my boyfriends family to celebrate his dad! And yes, peanut sauce is essential…. I would put it on everything if that was socially acceptable. Nutrition goals – stop snacking after dinner. I really want to rewind and focus on eating a satisfying dinner and stop reaching for that granola for a bit of crunch, or ice cream for my sweet tooth. Increasing protein intake at breakfast has been shown to decrease snacking in the evening!
Pyrex dishes are the best for leftovers! Even if they are a bit heavier to bring into the office, it’s much more fun eating out of those than regular tupperware. All about presentation! :)
I also like that you can store leftovers in them and easily eat out of them… sometimes I pour stuff out of Tupperware into a bowl and it seems like such a waste.
Spring rolls with peanut sauce are SO yummy! When we go to sushi, they are my go-to order, especially now that I am pregnant (they are a lot healthier than a lot of the cooked rolls).
I am like you – if I plan my meals for the week and have healthy things available, I will eat a lot better. I have been pretty good about eating healthy throughout my pregnancy. My goal this summer would be to continue eating a good variety of veggies, fruit, and protein, and to get outside (even for a walk) at least 5 days a week.

I love that you’re getting most of your produce from the farmer’s market this summer! As the daughter and wife of farmer’s I love seeing others support our goal-which is providing fresh, healthy food to the world :)
