Hey guys… happy Wednesday! Time for a run down of daily eats for What I Ate Wednesday. I’m especially excited about this post because I have reached a huge milestone since living in North Carolina for 4 years. Keep reading for more info about this monumental occasion in my life.
Breakfast
My supervisor at work disclosed that she has SEVENTY blueberry bushes at her house and brought me a giant bag of them last week. She might regret telling me this because now I’m going to secretly hope she brings me some every week! I have had so much fun using them in breakfast items throughout the past few days.
I don’t know about you guys but it is hot as F here, and hot breakfasts are completely out of the question right now. More and more I find myself reaching for cold, convenient items like yogurt, pieces of fruit, milk, hard boiled eggs, etc. On this day I had a cup of cottage cheese topped with blueberries. I really like nuking berries for about a minute before I top them over cold dairy so they are kind of runny. Perfect to toss in some tupperware on my way out the door.
If you read here then you know I loooooove baked apples over cottage cheese and that is a go-to breakfast for me. I’m trying to branch out this summer with fruits from the farmer’s market since I know apples will be plentiful in the fall.
Lunch
In my quest to be more on top of food prep, I made a bomb @$$ baked pasta dish on Sunday and I’ve been taking it for my lunches this week. I love that I have a wholesome meal ready for me in the fridge and I definitely need to make this type of meal prep a Sunday habit.
I’m not sure it translates well in this photo but this dish is made with whole wheat pasta, lots of vegetables (summer squash, zucchini, onions) and shredded chicken. It’s a good mix of food groups so that you’re not in carb overload.
A healthy grain + protein + at least 1 C of vegetables is the ideal lunch for me while I’m at work. Lots of staying power and I’m also fitting in some veggies.

Dinner
And here we are… BREAKING NEWS: I ate at COOKOUT for the first time since living in North Carolina. Whenever I tell people that I have never eaten there even though I’ve lived in NC for 4 years, they seem completely shocked. Apparently this place has 1,000+ milkshake flavors and is a once-in-a-while-staple in every North Carolinians diets.
I was very unique in my order and got a regular hamburger with tomato, lettuce, ketchup and mustard.
I was caught off guard by their combo and didn’t realize that you could pick not one, but *two* sides. Now I see why this place is so popular. I didn’t want to hold up the line so I ended up getting a double order of fries.
The funny thing is that I didn’t even get a milkshake. But I will say that I enjoyed the burger and fries more than your average fast food place. I started to look up the nutrition information about my meal and research more about their food items, but then I decided some things are just better left unknown. But I’m so glad I can check that off of my bucket list Does this make me a true Carolina Girl now?

P.S. I realize the majority of the content in my refrigerator right now is La Croix. I also realized that I have 3 cases. What can I say? A girl’s gotta have options in life.

I need that recipe asap! I am sick of our usual go-to meals, so a new recipe to try would be fab. And 70 blueberry bushes?! WHAT?! I’d be happy with one. ;)
Ha, I know. I am so bad at growing plants… if I tried to have a blueberry bush, I would definitely kill it. Check back in the next few days for that pasta recipe :)
I love fruit with cottage cheese! And our refrigerator looks very similar with several different La Croix flavors :)
I used to only like peaches with cottage cheese. But then one day I had a bunch of baked apples and no other fruit to go with cottage cheese, so I decided to give the combo a try and liked it! Now I use all sorts of fruits. It’s a good summertime breakfast because it’s cold. And even though it’s higher in protein, it doesn’t feel so heavy on my stomach.
What is La Croix?
Oh the Erin Conrad planner! It looks so pretty and I want one.
It’s flavored sparkling water. And it’s amazing!!

Next time I’m in the US I’m going to make it my mission to find LaCroix. I keep hearing about it, but I’ve yet to try it.
It’s a nice alternative to soda if you’re looking for something a little bubbly. I typically have a can in the afternoon when I’m looking for a little pick-me-up at work. My favorite flavor is the grapefruit (obviously, lol).
what 1000 milkshakes!? I am loving all the summer fruits right now especially watermelon
You’ve reminded me that I’ve yet to get a watermelon this summer…. definitely need to change that.
Oh my goodness, I can’t wait for that pasta recipe-it sounds delish! Especially since I will be having lots of fresh veggies coming in from our garden soon :)
