Happy Monday! It was a rainy weekend here in NC, as it was all over the east coast. I worked this weekend so nothing too crazy happened, but I did have Friday off so I’m going to count that as my weekend.
I ran some errands in Charlotte in the AM and met a friend for a drink afterwards. If day drinking is wrong then I don’t want to be right.
I was also on the search for a few new tops for going out and jeans that would either fit over or under my boot. I went to the mall where I got a pair of skinny jeans from the GAP. I tried on and LOVED these Tomgirl jeans from American Eagle (I copied them from my sister) but they didn’t work with my boot so I had to pass.
And I got these tops at TJMaxx.
I think the beige sweater will be great with skinny jeans or my wunder unders. Oh, and my hair was on fleek that morning but the weather quickly ruined it. It was pouring down rain by the time I got home on Saturday evening, so I just chilled out for the rest of the night…. worked on some blog stuff, listened to music, cleaned up my office and hit the hay early.
I worked on Saturday and was on call yesterday. Fun Fun
I hit up the grocery store and stocked up on some staples, which, ya know, primarily includes LaCroix.
I had picked up a bunch of veggies at the farmer’s market but cooking isn’t too enjoyable with this boot (bc of the standing). So I decided to just roast everything together in 1 pan so I could have it for the week. That was an excellent plan!
Roasting vegetables is super easy.
- Toss in EVOO, sprinkle with salt and papper
- Cook at 375 for 20 minutes or until veggies are soft and tender.
I’m still determined to maintain some level of physical activity right now. I hit up the weight room on Friday and swam yesterday. I pretty much stick with 1,000m right now because my foot is kind of uncomfortable.
I have a super busy week at work, and plans almost every night this week. Should be fun!
