Crock pot chicken has to be the easiest hot meal anyone can make. No culinary skills needed, I promise :)
- Whole chicken
- Poultry seasoning
- Slow cooker
- (Optional: vegetables)
- Remove the chicken from the wrapper and drain all of the liquid. If there’s anything on the inside the chicken then remove that also. [As a side note, you should never rinse a chicken in the sink before you cook it. You don’t need to “clean” the chicken because you are to kill bacteria when you cook it; all rinsing does is contaminate your sink and counters]
- Set your chicken in your crock pot and sprinkle poultry seasoning all over it (I use about 2 tablespoons)
- Surround with veggies if you’re using them
- Cook on high for 6 hours
I like to call this the meal that keeps on giving. I usually buy a medium-sized chicken and K and I eat about half of it. I pull the rest of the chicken meat off of the bone and save it for another meal (I put it in the fridge if I am going to use it in the next 3 days and freeze it if I don’t have immediate plans for it).
There will be a ton of juice in the crock pot. I keep all of the bones in the crock pot, add about 4 cups of water to it and cook on high for another hour or two. Then drain the juice into tupperware containers and freeze it for chicken broth.
Ideas for leftover chicken: quesadillas, tacos, burritos, stir-fry, chicken alfredo, chicken noodle soup
