I usually write these in advance and schedule them, but today you’re getting this post real time. I’m currently hanging out with a cup tea waiting for B to get off of work. I love Fridays!!!!

So my life has basically been crazy lately since I officially opened my private practice a few weeks ago. There are so many things to do other than counseling clients- marketing, emails, networking, tweaking my website, financial planning, etc. Everyday I come home from my regular job, walk Lily, and do private practice stuff for almost the whole evening.
My eating habits have definitely changed lately because of this! I really don’t have the time to spend hours in the kitchen cooking right now. Chopping vegetables, babysitting an oven and washing dishes are not really on my agenda in the evenings anymore. I’m turning more towards using my slow cooker to keep things simple and low-maintenance without eating out all the time.
It’s always unfortunate when your dinner isn’t very photogenic (aka its ugly ) but I still wanted to share this quick and simple meal. I cooked a pack of chicken breast tenders, 1 onion, 1 green pepper, cauliflower and a jar of curry sauce in the #slowcooker on high for 3 hours. The ingredients cost $12 and it made 4 servings. Super simple and took 5 minutes to prep! I’m finding that pretty much any mixture of veggies, protein and a sauce will work in the slow cooker. I used to prefer making my own sauces but I find myself reaching for the jars more and more lately. I look for sauces that are low in sodium, no added sugar and have few ingredients. I was surprised that Harris Teeter actually had a lot of good options when I took the time to look.
I’m also making my life easier by buying pre-chopped vegetables. I used to think this was such a waste of money but it has definitely been saving me time and energy.
I’m still using Sunday as a meal prep day to get a few things prepared to eat during the week. Hopefully things will calm down soon! I do really love cooking and I miss making more involved meals.
Half Marathon Training
It’s 93 days til the Nashville Rock N’ Roll Half Marathon but who’s counting?!
Just to be completely honest, my training did not start off on the right foot (literally). I have had a lot of aches and pains after a few shorter runs, and it made me realize how weak my leg muscles are. Thank you so much to all of the running bloggers who have been posting about the importance of strength training. I am definitely using your posts as a reference!
Tomorrow I’m going to the Health and Fitness expo here in Charlotte. I thought about paying to set up a booth there, but I was hesitant to invest the money since I wasn’t sure what it was about. I’m hoping to meet some awesome Health and Fitness people in the area tomorrow!
Then tomorrow evening, I’m going to a memorial service for a school food service employee who recently passed away. We worked together back when I was a school dietitian and had many lovely conversations that I will now fondly hold on to! I think there is a special place in heaven for “lunch ladies”.
