PCOS Nutrition Co.

Welcome to my (long!) journey to becoming a registered dietitian. While the road seemed long and difficult at times, I am so happy that I became an RD!

My education started at Virginia Tech, where I got a BS in Human Nutrition, Foods and Exercise. I did not choose the dietetics concentration at the time because I wasn’t sure what I wanted to do with my life :) I ended up working as a school dietitian for a few yeas in Virginia and got my Master’s in Health Education.

It was only after that that I realized that I wanted to be an RD. So I completed the University of Alabama’s distance Didactic Program in Dietetics:

  • My schedule of DPD Courses
  • Trying to finish a semester earlier
  • Nutritional Biochemistry
  • Introduction to Nutrition
  • Spring 2012 Semester
  • Getting my verification statement

In Spring 2013, I was matched with Utah State University’s dietetic internship program

  • Matched!
  • Completing my Prior Assessed Learning (PAL) packet
  • Orientation Day 1
  • Orientation Day 2
  • Orientation Days 3 & 4
  • Thoughts about orientation

Here’s a breakdown of all of my dietetic internship rotation posts!

  • Getting ready for my rotations
  • Inpatient Clinical: Week 1
  • Inpatient Clinical: Week 2
  • Inpatient Clinical: Week 3
  • Inpatient Clinical: Week 4
  • Inpatient Clinical: Week 5
  • Inpatient Clinical: Week 6
  • Inpatient Clinical: Week 7 (staff relief)
  • Inpatient Clinical: Week 8 (staff relief)
  • Food Service Weeks 1 & 2
  • Food Service: Weeks 3 & 4
  • Food Service: Week 5
  • Food Service: Week 6
  • Thoughts at the halfway point of the DI
  • Outpatient Clinical: Weeks 1 & 2
  • Outpatient Clinical: Week 3
  • My long-term care rotations were not the best experience and I did not blog about those- sorry!
  • Community: Weeks 1 & 2
  • Community: Week 3
  • Community: Week 4 <– the end of my internship!!
  • Thoughts on completing my internship
  • Life after internship

I did received prior assessed learning credit from my work experience in school nutrition, and that shaved over a month off of my internship :)

And then, the happiest day ever… when I passed my RD exam!!!

🧘 We know that stress is involved in our overal 🧘 We know that stress is involved in our overall wellbeing, but did you know there’s communication between your brain and your gut, so that stress directly influences your gut health?🤯
🤔 Gut health seems to be the new “hot topic” in nutrition spaces, but what even is “gut health”? I’ve been seeing a lot of trends going around that involve restricting foods and investing in expensive greens powders to “heal your gut”.🥬
But…what if it’s more about stress than it is about those minor tweaks to your diet? Or actually EXPANDING your diet by diversifying the foods you eat, instead of eliminating entire food groups?
‼️This is partially why I had to bring on an expert in this to discuss GI health! Especially for those of you with IBS.
In this episode, we discuss:
-Whether gluten and dairy are inflammatory for PCOS
-How restriction can make IBS worse
-The low FODMAP diet and how it’s used
-Tips if you have IBS when low FODMAP is too restrictive
🙏 I know you’re going to leave this episode realizing that you can find relief and nourish your body without rigid diets, stress, guilt, or shame, because that’s what our guest Samina @inclusive.ibs.dietitian specializes in!

🤦 I wish it was this simple, but cutting out gluten and dairy is likely not the “cure-all” you’re looking for to manage your PCOS.
🥦 Let's be real—the wellness industry can make you feel like you have to micromanage your diet to take care of yourself and your PCOS.
🔬 Surprisingly, research doesn't always support the need for strict elimination diets like cutting out gluten and dairy, and dairy can even help reduce inflammation and support gut health.
🎙️ In episode 35 of the Nourished with PCOS podcast we are joined by fellow registered dietitian and GI health expert, Samina Qureshi @inclusive.ibs.dietitian. Samina specializes in helping people who struggle with Irritable Bowel Syndrome (IBS) find relief and nourish their bodies without rigid diets, stress, guilt, or shame.
⭐ Samina's wisdom and expertise will inspire you to let go of the unnecessary food restrictions and embrace a more joyful, holistic approach to your health!⭐

If you're tired of the binge/restrict cycle then I If you're tired of the binge/restrict cycle then I want you to know that you can break it!⁣
I understand what leads you to this cycle. All you're told is to cut out XYZ food to manage PCOS. You try so hard to be "good", but you kind yourself back in the same spot.
This is not your fault! Your body is made to try to protect itself from starvation - it has nothing to do with your willpower.
It is possible to take a non-diet approach to nutrition and:
✨ decrease carb cravings
✨ have better energy
✨ lower your A1c and glucose
